Description

A traditional New Mexican comfort food featuring layers of corn tortillas, shredded chicken, and roasted green chile sauce, topped with melted cheese.


Ingredients

  • 2 cups cooked and shredded chicken
  • 1 1/2 cups roasted New Mexico green chiles, chopped
  • 2 cups shredded Monterey Jack cheese
  • 1/2 cup chopped onion
  • 12 corn tortillas
  • 1 cup chicken broth
  • 1/2 cup sour cream (optional)
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. In a medium saucepan, heat 1 tbsp oil and sautรฉ onions until soft. Add green chiles and chicken broth. Simmer for 5 minutes.
  3. Optional: Stir in sour cream to make a creamy green chile sauce. Season with salt to taste.
  4. In a skillet, lightly fry tortillas one at a time in a little oil to soften. Drain on paper towels.
  5. Spread a small amount of sauce in the bottom of a 9ร—13 inch baking dish.
  6. Layer 4 tortillas, half the chicken, a third of the cheese, and a third of the green chile sauce.
  7. Repeat layers, ending with tortillas, sauce, and remaining cheese on top.
  8. Bake uncovered for 25โ€“30 minutes, until bubbly and golden.
  9. Garnish with chopped cilantro if desired. Serve hot.

Notes

  • Use freshly roasted Hatch green chiles for authentic flavor.
  • Can be prepared ahead and refrigerated before baking.
  • Pairs well with Spanish rice and pinto beans.
