Description
A traditional New Mexican comfort food featuring layers of corn tortillas, shredded chicken, and roasted green chile sauce, topped with melted cheese.
Ingredients

- 2 cups cooked and shredded chicken
- 1 1/2 cups roasted New Mexico green chiles, chopped
- 2 cups shredded Monterey Jack cheese
- 1/2 cup chopped onion
- 12 corn tortillas
- 1 cup chicken broth
- 1/2 cup sour cream (optional)
- 2 tbsp vegetable oil
- Salt to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- In a medium saucepan, heat 1 tbsp oil and sautรฉ onions until soft. Add green chiles and chicken broth. Simmer for 5 minutes.
- Optional: Stir in sour cream to make a creamy green chile sauce. Season with salt to taste.
- In a skillet, lightly fry tortillas one at a time in a little oil to soften. Drain on paper towels.
- Spread a small amount of sauce in the bottom of a 9ร13 inch baking dish.
- Layer 4 tortillas, half the chicken, a third of the cheese, and a third of the green chile sauce.
- Repeat layers, ending with tortillas, sauce, and remaining cheese on top.
- Bake uncovered for 25โ30 minutes, until bubbly and golden.
- Garnish with chopped cilantro if desired. Serve hot.
Notes
- Use freshly roasted Hatch green chiles for authentic flavor.
- Can be prepared ahead and refrigerated before baking.
- Pairs well with Spanish rice and pinto beans.
