- 1 cup peanut butter (natural or creamy)
- 1/2 cup honey or maple syrup
- 1/2 cup mini chocolate chips
- 1/2 cup chopped nuts (walnuts, almonds, or peanuts)
- 1/4 cup shredded coconut (optional)
- 1 tsp vanilla extract
Instructions
- In a medium saucepan, warm peanut butter and honey over low heat until melted and smooth.
- Remove from heat and stir in vanilla extract.
- In a large bowl, combine oats, chocolate chips, chopped nuts, and shredded coconut.
- Pour the peanut butter mixture over the dry ingredients and mix thoroughly until well combined.
- Using a spoon, drop spoonfuls of the mixture onto parchment-lined baking sheet.
- Refrigerate for at least 1 hour until set.
- Store in an airtight container in the fridge.
