  • 1 1/2 cups canned or fresh cherries, pitted (reserve some for topping)
  • 1 tbsp cherry juice (or juice from canned cherries)
  • 1/2 cup powdered sugar (optional, for extra sweetness)
  • Whipped cream (for topping)
  • Chocolate shavings or grated chocolate (for topping)

Instructions

  1. Prepare the Biscuit Base – In a large bowl, crush the digestive biscuits into small pieces (not crumbs). In a separate bowl, combine the melted butter and cocoa powder, then pour this mixture over the crushed biscuits. Stir until the biscuits are fully coated.
  2. Press the Base into the Pan – Line an 8×8-inch (or similar-sized) square pan with parchment paper. Press the biscuit mixture firmly into the bottom to form a solid base. Refrigerate while you prepare the filling.
  3. Make the Creamy Filling – In a large bowl, whisk together the heavy cream, sweetened condensed milk, sour cream (or Greek yogurt), and powdered sugar (if using) until smooth and well combined.
  4. Add the Cherries – Add the pitted cherries (reserve a few for topping) and cherry juice to the creamy mixture and gently stir them in. The cherries will provide a lovely burst of flavor throughout the filling.
  5. Assemble the Slice – Pour the creamy cherry filling over the chilled biscuit base and spread it evenly with a spatula.
  6. Chill – Refrigerate the slice for at least 3 hours, or until the filling is set and firm.
  7. Top with Chocolate and Whipped Cream – Once set, top the slice with whipped cream, chocolate shavings or grated chocolate, and the reserved cherries for garnish.
