Ingredients
Scale
- 200g digestive biscuits (or any plain biscuits), crushed
- 1/2 cup unsalted butter, melted
- 1/4 cup honey or maple syrup
- 1 1/2 cups fresh or frozen blackcurrants
- 1/2 cup heavy cream
- 1/4 cup sweetened condensed milk
- 1 tsp vanilla extract
- 1/4 cup oats (for crumble topping)
- 1/4 cup brown sugar
- 2 tbsp all-purpose flour
- A pinch of salt
Instructions
- Prepare the Biscuit Base – In a large bowl, crush the digestive biscuits into small pieces (not crumbs). In a separate bowl, combine the melted butter and honey (or maple syrup). Pour this mixture over the crushed biscuits and stir well until the biscuits are coated.
- Press the Base into the Pan – Line a 9×9-inch (or similar-sized) square pan with parchment paper. Press the biscuit mixture into the bottom of the pan, ensuring it’s evenly spread and firm. Refrigerate while you prepare the filling and crumble topping.
- Prepare the Blackcurrant Filling – In a small saucepan, heat the blackcurrants over medium heat until they start to soften and release juice. Stir occasionally and cook for about 5-7 minutes. Mash the blackcurrants lightly with a spoon or potato masher to create a chunky filling. Remove from heat and let it cool slightly.
- Make the Crumble Topping – In a small bowl, combine the oats, brown sugar, flour, and a pinch of salt. Stir in the melted butter until it forms a crumble-like texture.
- Assemble the Slice – Pour the blackcurrant mixture over the chilled biscuit base and spread evenly. Then, sprinkle the crumble topping over the blackcurrant filling, covering it completely.
- Chill – Refrigerate the slice for at least 2 hours, or until it is firm and set.
- Serve – Once chilled and set, slice the crumble into squares and serve. Enjoy the delightful balance of sweet and tart flavors!
Notes
- You can substitute blackcurrants with other berries like blueberries or raspberries if needed.
- For a smoother filling, you can blend the blackcurrants before cooking them.
- If you want a richer topping, you can add chopped nuts or coconut flakes to the crumble mixture.
