Instructions

  1. Make the Brownie Bite Mixture:
    • In a large bowl, combine the rolled oats, almond flour, cocoa powder, and salt.
    • Add the honey (or maple syrup), peanut butter (or almond butter), and vanilla extract. Stir everything together until the mixture becomes thick and sticky.
    • If the mixture is too dry, add 1-2 tablespoons of milk to help bind the dough together. You want the mixture to be firm but moldable.
  2. Form the Brownie Bites:
    • Using your hands or a small cookie scoop, roll the mixture into bite-sized balls, about 1 inch in diameter. Place them on a baking sheet or plate lined with parchment paper.
    • Once all the bites are rolled, place them in the fridge for 15-20 minutes to firm up.
  3. Make the Chocolate Ganache (Optional):
    • If you’re using ganache, place the chocolate chips and heavy cream in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until the chocolate is completely melted and smooth.
    • Once the brownie bites are firm, dip each one into the ganache and place them back on the parchment paper to set. Alternatively, you can drizzle the ganache over the bites for a fun look.
  4. Optional Toppings:
