- 1/2 cup unsalted butter, melted
- 1/2 cup sweetened condensed milk
- 1/2 cup cocoa powder
- 1 tsp vanilla extract
- 1/4 cup chopped nuts (optional, for extra crunch)
- 1/2 cup chocolate chips (for topping)
- 2 tbsp coconut oil (for the chocolate topping)
Instructions
- Prepare the Biscuit Base – In a large bowl, crush the digestive biscuits into small pieces (not crumbs). Add the shredded coconut to the biscuits and stir until well combined.
- Make the Base Mixture – In a separate bowl, mix the melted butter, sweetened condensed milk, cocoa powder, and vanilla extract. Pour this mixture over the biscuit and coconut mixture and stir until fully combined. If you’re adding chopped nuts, mix them in now.
- Press the Mixture into the Pan – Line a square pan (approximately 8×8 inches) with parchment paper. Press the biscuit mixture firmly into the pan, ensuring it’s evenly spread. Place the pan in the fridge to chill while you prepare the chocolate topping.
- Prepare the Chocolate Topping – In a small microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 20-second intervals, stirring in between, until fully melted and smooth.
- Top the Slice – Pour the melted chocolate mixture over the chilled biscuit base, spreading it evenly with a spatula to cover the top.
- Chill – Refrigerate the slice for at least 2-3 hours, or until the chocolate topping is set and the slice is firm.
