Description

These No-Bake Chocolate Oat Cookies are easy to make with just a few ingredients. They are rich, chewy, and packed with chocolatey goodness and oats, making them the perfect sweet snack or dessert.

Ingredients

Scale
  • 1 1/2 cups old-fashioned rolled oats
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup peanut butter (or almond butter)
  • 1/2 cup unsweetened milk (or dairy-free milk of choice)
  • 1 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup butter
  • 1/4 cup honey or maple syrup (optional for extra sweetness)

Instructions

  1. In a medium saucepan, combine the sugar, cocoa powder, butter, and milk. Heat over medium heat, stirring constantly until the mixture comes to a gentle boil. Once it starts boiling, let it cook for 1-2 minutes while stirring.
  2. Remove the saucepan from heat and stir in the peanut butter, vanilla extract, and salt until the peanut butter is fully melted and the mixture is smooth.
  3. Add the rolled oats to the mixture and stir until all the oats are fully coated with the chocolatey sauce.
  4. Line a baking sheet or tray with parchment paper or a silicone baking mat.
  5. Using a spoon, scoop spoonfuls of the cookie mixture and drop them onto the prepared tray. You can shape them into round mounds or leave them as-is for a rustic look.
  6. Let the cookies sit at room temperature for about 30-45 minutes, or until they firm up and set. You can also speed up the process by placing them in the fridge for about 15-20 minutes.
  7. Enjoy your no-bake chocolate oat cookies! Store leftovers in an airtight container at room temperature for up to 1 week, or in the fridge for up to 2 weeks.

Notes

  • If you prefer a dairy-free version, you can substitute the butter with coconut oil or vegan butter, and use a dairy-free milk like almond milk or oat milk.
  • For a crunchy texture, add chopped nuts (like walnuts or almonds) or chocolate chips into the mixture before spooning onto the tray.
  • To make them even more indulgent, you can drizzle melted chocolate on top of the cookies before they set.
  • Feel free to adjust the sweetness by adding more honey or maple syrup to suit your taste.
