This No-Bake Gingerbread Biscuit Slice is a holiday favorite that’s super easy to make and perfect for any time you want a spiced, sweet treat. With the warm flavors of gingerbread and a crunchy biscuit base, this slice comes together in no time without ever needing to turn on the oven!

- 300g digestive biscuits (or any plain biscuit), crushed
- 1/2 cup unsalted butter, melted
- 1/4 cup brown sugar
- 1/2 cup golden syrup or honey
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves (optional)
- 1/2 cup dried fruit (raisins, currants, or sultanas)
- 1/4 cup chopped crystallized ginger (optional)
- 1/2 cup white chocolate chips (optional, for topping)
Instructions
- Prepare the Biscuit Base – In a large bowl, crush the biscuits into small pieces (not crumbs, but small chunks). Set aside.
- Make the Syrup Mixture – In a saucepan, melt the butter over medium heat. Add the brown sugar, golden syrup (or honey), ground ginger, cinnamon, nutmeg, and cloves. Stir constantly until the sugar has dissolved and the mixture is smooth.
- Combine Ingredients – Pour the syrup mixture over the crushed biscuits. Add the dried fruit and chopped crystallized ginger (if using). Stir everything together until the biscuits are well-coated with the syrup mixture and evenly combined.
- Press into a Pan – Line a 9×9-inch (or similar-sized) square baking dish with parchment paper. Pour the biscuit mixture into the pan and press it down firmly with the back of a spoon to compact it into an even layer.
- Chill – Place the dish in the fridge and let it chill for at least 2 hours, or until the slice is firm and set.
- Top with White Chocolate (optional) – If desired, melt the white chocolate chips in a microwave-safe bowl in 20-second intervals, stirring in between, until smooth. Drizzle the melted chocolate over the chilled biscuit slice and allow it to set for about 10 minutes in the fridge.
- Serve – Cut the chilled slice into squares or bars. Serve and enjoy your delicious no-bake gingerbread biscuit slice!
Notes
- This slice can be stored in an airtight container in the fridge for up to a week.
- You can substitute the white chocolate drizzle with milk chocolate or dark chocolate for a different flavor.
