Description

This No-Bake Hot Cross Bun Slice is a delightful twist on the classic hot cross buns. With all the warm, spiced flavors of the traditional Easter treat, this no-bake version is easy to prepare and perfect for a quick dessert.   • 250g digestive biscuits (or any plain biscuits), crushed
  • 1/2 cup unsalted butter, melted
  • 1/2 cup dried currants or raisins
  • 1/4 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves (optional)
  • 1/2 cup heavy cream
  • 1/4 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 1/4 cup white chocolate chips (optional, for topping)
  • 1/4 cup icing sugar (for cross topping)
  • A pinch of salt

Instructions

  1. Prepare the Biscuit Base – In a large bowl, crush the digestive biscuits into small pieces (not crumbs). Add the dried currants, brown sugar, cinnamon, nutmeg, ginger, and cloves to the crushed biscuits, mixing well to combine.
  2. Make the Wet Mixture – In a separate bowl, melt the butter, then mix in the heavy cream, sweetened condensed milk, and vanilla extract. Stir until the mixture is smooth.
  3. Combine and Press – Pour the wet mixture over the biscuit mixture and stir until all ingredients are well-coated and combined. Press the mixture into an 8×8-inch (or similar-sized) square pan lined with parchment paper. Press down firmly to create an even base. Refrigerate while you make the topping.
  4. Make the Cross Topping – In a small bowl, whisk the icing sugar with a few teaspoons of water to form a thick but pourable glaze. Transfer to a piping bag or use a small plastic sandwich bag with the tip cut off to pipe the icing in the shape of crosses on top of the chilled slice.
  5. Chill – Place the pan in the fridge for at least 2 hours, or until the slice is firm and set.
  6. Optional White Chocolate Drizzle – If desired, melt the white chocolate chips in the microwave and drizzle over the top of the slice before serving.
  7. Serve – Once the slice has chilled and set, cut into squares and serve. Enjoy the spiced flavor and festive twist of this no-bake treat!

Notes
