Ingredients
Scale
- 250g digestive biscuits (or any plain biscuits), crushed
- 1/2 cup unsalted butter, melted
- 1/2 cup dried currants or raisins
- 1/4 cup brown sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves (optional)
- 1/2 cup heavy cream
- 1/4 cup sweetened condensed milk
- 1 tsp vanilla extract
- 1/4 cup white chocolate chips (optional, for topping)
- 1/4 cup icing sugar (for cross topping)
- A pinch of salt
Instructions
- Prepare the Biscuit Base – In a large bowl, crush the digestive biscuits into small pieces (not crumbs). Add the dried currants, brown sugar, cinnamon, nutmeg, ginger, and cloves to the crushed biscuits, mixing well to combine.
- Make the Wet Mixture – In a separate bowl, melt the butter, then mix in the heavy cream, sweetened condensed milk, and vanilla extract. Stir until the mixture is smooth.
- Combine and Press – Pour the wet mixture over the biscuit mixture and stir until all ingredients are well-coated and combined. Press the mixture into an 8×8-inch (or similar-sized) square pan lined with parchment paper. Press down firmly to create an even base. Refrigerate while you make the topping.
- Make the Cross Topping – In a small bowl, whisk the icing sugar with a few teaspoons of water to form a thick but pourable glaze. Transfer to a piping bag or use a small plastic sandwich bag with the tip cut off to pipe the icing in the shape of crosses on top of the chilled slice.
- Chill – Place the pan in the fridge for at least 2 hours, or until the slice is firm and set.
- Optional White Chocolate Drizzle – If desired, melt the white chocolate chips in the microwave and drizzle over the top of the slice before serving.
- Serve – Once the slice has chilled and set, cut into squares and serve. Enjoy the spiced flavor and festive twist of this no-bake treat!
Notes
- If you prefer, you can add chopped candied ginger or mixed dried fruit instead of currants for a variation on the flavor.
- You can make the cross topping in advance and refrigerate it to speed up the process.
- This slice can be stored in an airtight container in the fridge for up to 4-5 days.
