  • 1/2 cup (120g) golden syrup or honey
  • 1/4 cup (50g) sugar
  • 3 cups (240g) rice bubbles (Rice Krispies or puffed rice)
  • 1 1/2 cups (180g) mini marshmallows (or regular marshmallows cut into small pieces)
  • 1/4 cup (25g) desiccated coconut (optional, for coating or mixing)
  • 1/2 cup (90g) chocolate chips (optional, for topping)

Instructions

  1. Prepare the Pan: Line a 9×9-inch (23×23 cm) square baking pan with parchment paper or lightly grease it to prevent sticking.
  2. Make the Syrup Mixture: In a medium saucepan, melt the butter over medium heat. Once melted, add the golden syrup (or honey) and sugar. Stir until the sugar is dissolved, and the mixture is smooth.
  3. Combine with Rice Bubbles: Remove the saucepan from the heat. Add the rice bubbles to the syrup mixture and stir until fully coated.
  4. Add Marshmallows: Gently fold in the mini marshmallows (or chopped marshmallows). Be careful not to melt them too much; you want them to hold their shape.
  5. Press Into Pan: Pour the mixture into the prepared baking pan. Press it down firmly using the back of a spoon or your hands to ensure it’s compact and even.
  6. Chill: If you’re using chocolate chips, sprinkle them over the top of the mixture while it’s still warm, pressing them in slightly. Alternatively, you can melt the chocolate chips and drizzle them over the slice later. Let the slice cool at room temperature for 30 minutes, then refrigerate it for 1-2 hours or until firm.
  7. Slice & Serve: Once set, remove from the fridge and cut into squares or bars. Serve and enjoy!
