Description

This No-Bake Passion Fruit Slice is a tropical, refreshing dessert that combines the tangy sweetness of passion fruit with a crunchy biscuit base and smooth creamy filling.   • 1/2 cup sweetened condensed milk
  • 1/4 cup fresh passion fruit pulp (from about 45 passion fruits)
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar (optional, for extra sweetness)
  • 1/2 cup whipped cream (or double cream)
  • 1/4 cup desiccated coconut (optional, for added texture)

Instructions

  1. Prepare the Biscuit Base – In a large bowl, crush the digestive biscuits into small pieces (not crumbs). In a separate bowl, combine the melted butter with the sweetened condensed milk. Pour this over the crushed biscuits and stir until well coated.
  2. Press the Base into the Pan – Line an 8×8-inch (or similar-sized) square pan with parchment paper. Press the biscuit mixture firmly into the bottom of the pan to form a solid base. Refrigerate the base while you prepare the filling.
  3. Make the Passion Fruit Filling – In a large bowl, beat the softened cream cheese and powdered sugar (if using) until smooth and creamy. Add the fresh passion fruit pulp and continue to beat until fully combined.
  4. Whip the Cream – In a separate bowl, whip the cream until stiff peaks form, then gently fold it into the cream cheese and passion fruit mixture until smooth and fluffy.
  5. Assemble the Slice – Pour the passion fruit mixture over the chilled biscuit base and smooth the top with a spatula.
  6. Chill – Refrigerate the slice for at least 3 hours, or until the filling is set and firm.
