These No-Bake Peanut Butter Bars are the perfect combination of creamy peanut butter, a rich chocolate coating, and a touch of sweetness. Quick to make and delicious, they’re perfect for a snack or a sweet treat at any time of the year. They’re even better with a sprinkle of festive sprinkles on top!

- 2 cups creamy peanut butter
- ½ cup unsalted butter, softened (1 stick)
- 2 teaspoons vanilla extract
- ½ teaspoon salt
- 4–5 cups powdered sugar (start with 4 cups and add more if too wet)
- 1 ½ cups chocolate chips
- 1 teaspoon coconut oil
- 2 tablespoons festive sprinkles (optional)
Instructions
- Prepare Your Pan: Line an 8×8” or 9×9” dish with parchment paper and set aside.
- Mix the Peanut Butter and Butter: In a large bowl, add the peanut butter and softened butter. Blend on medium speed using an electric hand mixer until smooth, or use a stand mixer fitted with the paddle attachment.
- Add Vanilla and Salt: Add the vanilla extract and salt to the peanut butter mixture and blend to combine.
- Incorporate the Powdered Sugar: Gradually add the powdered sugar, mixing on low speed in between each addition. Scrape down the sides of the bowl as you go. Start with 4 cups of powdered sugar and add more if the mixture is too wet.
- Form the Base: Mix until the sugar is incorporated, and the dough looks like large crumbles. Pour the dough into the prepared pan and press it down into an even layer. For an extra smooth top, place a piece of parchment paper or wax paper over the mixture and press down until flat.
- Melt the Chocolate: In a medium microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in the microwave for 30 seconds, then stir. Repeat this process for 2 additional 30-second intervals, stirring between each.
- Top with Chocolate: Pour the melted chocolate over the peanut butter mixture and spread it evenly across the surface.
- Add the Sprinkles: While the chocolate is still wet, sprinkle the festive sprinkles on top.
- Chill and Set: Place the bars in the refrigerator for 20 minutes to allow the chocolate to set and firm up.
- Serve and Enjoy: Enjoy chilled or at room temperature.
