- 2½ cups sugar
- ½ cup evaporated milk
- ½ cup corn syrup
- ½ cup butter
- 1 teaspoon vanilla
- 2–2½ cups chopped pecans
- 2½ cups grated coconut
Instructions
- Prepare Ingredients: Set pecans, coconut, and vanilla off to the side.
- Mix and Boil: In a large saucepan, mix sugar, evaporated milk, corn syrup, and butter. Bring the mixture to a rolling boil and continue boiling for 3 minutes.
- Add Pecans and Coconut: Remove the saucepan from the heat and add the pecans, coconut, and vanilla. Stir the mixture for about 4 minutes until well combined.
- Form Cookies: Take a spoonful of the mixture and place it on wax paper. Let it sit until the mixture has hardened.
- Serve: Once the cookies have set, remove them from the wax paper and enjoy.
