- 2½ cups grated coconut
Instructions
- Prepare Ingredients: Set the chopped pecans, grated coconut, and vanilla extract aside.
- Mix and Boil: In a large saucepan, combine sugar, evaporated milk, corn syrup, and butter. Bring the mixture to a rolling boil and continue boiling for 3 minutes.
- Add Pecans and Coconut: Remove the saucepan from heat and stir in the pecans, coconut, and vanilla. Mix well for about 4 minutes until combined.
- Form Cookies: Scoop spoonfuls of the mixture onto wax paper and let it sit until hardened.
