Description

These delightful, no-bake peppermint bark snowballs combine the rich flavors of chocolate and refreshing peppermint. They’re the perfect treat for holiday parties or gifting, with a festive white chocolate coating and a crunchy peppermint topping. Easy to make, and utterly delicious, these snowballs are a fun and sweet addition to any celebration.

Ingredients

Scale

Baking & Spices:

  • 2 cups crushed chocolate wafer cookies or chocolate graham crackers
  • 1/2 cup powdered sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp peppermint extract

Dairy:

  • 1/2 cup unsalted butter, melted

Toppings:

  • 1 cup white chocolate chips (or chopped white chocolate)
  • 1/2 cup crushed candy canes or peppermint candies

Instructions

  • Combine Dry Ingredients:
In a large bowl, mix the crushed chocolate wafer cookies (or graham crackers), powdered sugar, and cocoa powder until well combined. This forms the base of the snowballs.
  • Add Wet Ingredients:
Stir in the melted butter and peppermint extract until the mixture is moist enough to come together. It should be easy to roll into balls.
  • Shape the Snowballs:
Take about 1 tablespoon of the mixture and roll it between your palms to form a small ball. Place each ball on a parchment-lined baking sheet. Continue with the rest of the mixture.
  • Chill the Snowballs:
Place the baking sheet in the refrigerator for about 30 minutes, or until the snowballs firm up.
  • Melt the White Chocolate:
In a microwave-safe bowl, melt the white chocolate chips in 20-second intervals, stirring after each interval until completely melted and smooth.
  • Coat the Snowballs:
Dip each chilled snowball into the melted white chocolate, allowing any excess to drip off. Place the coated snowballs back on the parchment-lined baking sheet.
  • Add Crushed Peppermint:
Immediately sprinkle the tops of each coated snowball with the crushed candy canes or peppermint candies for a festive touch.
  • Set and Serve:
Let the snowballs set at room temperature or refrigerate until the white chocolate has hardened. Once set, serve and enjoy!

Notes

  • If you prefer a more intense peppermint flavor, add a bit more peppermint extract to the mixture.
  • These snowballs can be made ahead of time and stored in the refrigerator for up to a week.
  • Feel free to substitute the white chocolate chips with chopped white chocolate for a smoother coating.
  • You can also roll the snowballs in extra crushed cookies instead of the peppermint topping for a different twist.
  • For an even creamier texture, add a little bit of cream cheese to the mixture.
