Instructions
- In a bowl, mix graham cracker crumbs and melted butter. Press evenly into the bottom of a lined 9×9-inch pan to form the crust. Chill in the refrigerator while preparing filling.
- In a mixing bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Gently fold in whipped heavy cream until fully combined.
- Spread the cheesecake filling evenly over the chilled crust.
- Sprinkle chocolate chips evenly over the cheesecake layer.
- Top with mini marshmallows, pressing them lightly into the filling.
- Use a kitchen torch to toast the marshmallows until golden brown, or place under the broiler for 1-2 minutes watching closely.
