Description

This No-Bake Toffee Pudding Slice is a rich and indulgent dessert made with layers of creamy toffee, crispy biscuits, and a smooth pudding topping. With no baking required, it’s the perfect treat when you’re craving something sweet and easy to make.

Ingredients

Scale
  • 250g digestive biscuits (or any plain biscuits), crushed
  • 1/2 cup unsalted butter, melted
  • 1/2 cup sweetened condensed milk
  • 1/2 cup toffee sauce or caramel sauce
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar (optional, for sweetness)
  • 1 tsp vanilla extract
  • 1/2 cup toffee or caramel bits (optional, for topping)
  • A pinch of salt

Instructions

  1. Prepare the Biscuit Base – In a large bowl, crush the digestive biscuits into small pieces (not crumbs). In a separate bowl, combine the melted butter with the condensed milk and toffee sauce, then pour this over the crushed biscuits. Stir well until the biscuits are fully coated and the mixture is combined.
  2. Press into the Pan – Line an 8×8-inch (or similar-sized) square pan with parchment paper. Press the biscuit mixture into the bottom of the pan, making an even and firm layer. Refrigerate while you prepare the pudding topping.
  3. Make the Toffee Pudding Layer – In a medium bowl, whip the heavy cream with the powdered sugar (if using) and vanilla extract until stiff peaks form. Gently fold in the toffee sauce or caramel sauce, ensuring it’s evenly distributed throughout the whipped cream.
  4. Assemble the Slice – Spread the toffee pudding mixture over the chilled biscuit base, smoothing the top with a spatula.
  5. Chill – Refrigerate the slice for at least 2-3 hours, or until the pudding layer is firm and set.
  6. Serve – Once chilled and set, top with toffee or caramel bits (optional), slice into squares, and enjoy!

Notes

  • You can add a drizzle of extra toffee or caramel sauce on top for more richness.
  • If you prefer a firmer crust, you can bake the biscuit base at 350°F (175°C) for 10 minutes, then cool completely before proceeding with the recipe.
  • You can also sprinkle a bit of sea salt on top to add a sweet-and-salty twist.
