Instructions

  1. Prepare the Base: – In a bowl, combine the crushed digestive biscuits and sugar (if using). Add the melted butter and mix until the mixture is well combined and the crumbs are evenly coated.
  2. Press the Base into the Pan: – Line a square or rectangular pan (around 8×8 inches) with parchment paper. Press the biscuit mixture firmly into the base of the pan to form an even layer. Chill the pan in the fridge while you prepare the mousse.
  3. Make the Mousse Filling: – In a large mixing bowl, beat the heavy cream until stiff peaks form. In a separate bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  4. Combine the Mousse Ingredients: – Gently fold the whipped cream into the cream cheese mixture until fully combined and light. Be careful not to deflate the whipped cream.
  5. Assemble the Slice: – Spoon the mousse mixture over the chilled biscuit base and smooth the top with a spatula. Drizzle the jam over the mousse and use a knife to swirl the jam into the filling for a beautiful marbled effect.
