Ingredients
Scale
For the Base:
- 1 1/2 cups digestive biscuits (or any plain biscuits), crushed
- 1/4 cup unsalted butter, melted
- 2 tbsp sugar (optional)
For the Mousse Filling:
- 1 cup heavy cream
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup strawberry or raspberry jam (for the swirl)
For the Topping:
- Fresh strawberries or raspberries, sliced (optional for garnish)
- Extra jam for drizzling (optional)
Instructions
- Prepare the Base: – In a bowl, combine the crushed digestive biscuits and sugar (if using). Add the melted butter and mix until the mixture is well combined and the crumbs are evenly coated.
- Press the Base into the Pan: – Line a square or rectangular pan (around 8×8 inches) with parchment paper. Press the biscuit mixture firmly into the base of the pan to form an even layer. Chill the pan in the fridge while you prepare the mousse.
- Make the Mousse Filling: – In a large mixing bowl, beat the heavy cream until stiff peaks form. In a separate bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
- Combine the Mousse Ingredients: – Gently fold the whipped cream into the cream cheese mixture until fully combined and light. Be careful not to deflate the whipped cream.
- Assemble the Slice: – Spoon the mousse mixture over the chilled biscuit base and smooth the top with a spatula. Drizzle the jam over the mousse and use a knife to swirl the jam into the filling for a beautiful marbled effect.
- Chill: – Refrigerate the slice for at least 4 hours, or until the mousse is set and firm.
- Serve: – Once set, slice the dessert into squares or bars. Garnish with fresh berries and drizzle with extra jam if desired.
Notes
- For a more traditional Victoria sponge flavor, you can use raspberry jam or strawberry jam in the filling.
- To make it even richer, you can add a layer of whipped cream on top of the mousse before serving.
- This slice can be stored in the fridge for up to 3 days.
