No Churn Strawberry Ice Cream is a quick and easy dessert that doesn’t require an ice cream maker!   • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 1 teaspoon lemon juice
  • 1 can (14 oz) sweetened condensed milk
  • 2 cups heavy whipping cream
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the strawberries: In a medium bowl, combine the sliced strawberries, sugar, and lemon juice. Let the strawberries sit for 10-15 minutes to release their juices.
  2. Blend the strawberries: Once the strawberries have released their juice, use a blender or food processor to puree the strawberries until smooth. You can leave it slightly chunky for a more textured ice cream, if preferred.
  3. Whip the cream: In a separate bowl, beat the heavy whipping cream with vanilla extract until stiff peaks form.
  4. Combine the ingredients: Gently fold the strawberry puree into the whipped cream. Then, fold in the sweetened condensed milk until everything is fully combined.
  5. Freeze the ice cream: Pour the mixture into a loaf pan or airtight container. Smooth the top with a spatula and cover tightly with plastic wrap. Freeze for at least 6 hours, or until fully set.
  6. Serve: Once frozen, scoop and serve the creamy strawberry ice cream. Enjoy immediately or store leftovers in the freezer for up to 2 weeks.

Notes

  • If you want a swirled effect, reserve some of the strawberry puree and swirl it through the ice cream mixture before freezing.
  • For an added crunch, fold in some crushed graham crackers or chopped chocolate before freezing.
  • Feel free to use frozen strawberries if fresh ones aren’t available. Just make sure to thaw them before blending.
