- 1/2 cup light corn syrup
- 1/4 cup water
- 2 large egg whites, at room temperature
- 1 (3 oz) package of flavored Jello (any color or flavor of your choice)
- 1 tsp vanilla extract
- 1/2 cup chopped nuts (optional, can use pecans or walnuts)
- Pinch of salt
Instructions
- In a medium saucepan, combine sugar, corn syrup, and water. Heat over medium heat, stirring occasionally until the sugar has dissolved. Bring to a boil and let it cook for about 5 minutes until the mixture reaches 240°F (115°C) on a candy thermometer.
- While the syrup is cooking, beat the egg whites with a pinch of salt in a stand mixer or using a hand mixer until soft peaks form.
- Once the syrup reaches the correct temperature, carefully pour it into the egg whites while the mixer is running on low. Gradually increase the speed to medium-high and beat until the mixture thickens and holds stiff peaks (about 5–7 minutes).
- Add the Jello powder and vanilla extract, and beat again until fully incorporated and the mixture is glossy and fluffy.
- If desired, fold in chopped nuts gently to the mixture.
- Using a spoon or cookie scoop, drop spoonfuls of the divinity onto wax paper or parchment paper. Let them sit and cool for at least 4–6 hours or overnight to firm up.
- Once set, enjoy your No Fail Jello Divinity! Store leftovers in an airtight container for up to a week.
