Description

Ingredients

  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 2 large egg whites, at room temperature
  • 1 (3 oz) package of flavored Jello (any color or flavor of your choice)
  • 1 tsp vanilla extract
  • 1/2 cup chopped nuts (optional, can use pecans or walnuts)
  • Pinch of salt

Instructions

  1. In a medium saucepan, combine sugar, corn syrup, and water. Heat over medium heat, stirring occasionally until the sugar has dissolved. Bring to a boil and let it cook for about 5 minutes until the mixture reaches 240°F (115°C) on a candy thermometer.
  2. While the syrup is cooking, beat the egg whites with a pinch of salt in a stand mixer or using a hand mixer until soft peaks form.
  3. Once the syrup reaches the correct temperature, carefully pour it into the egg whites while the mixer is running on low. Gradually increase the speed to medium-high and beat until the mixture thickens and holds stiff peaks (about 5–7 minutes).
  4. Add the Jello powder and vanilla extract, and beat again until fully incorporated and the mixture is glossy and fluffy.
  5. If desired, fold in chopped nuts gently to the mixture.
  6. Using a spoon or cookie scoop, drop spoonfuls of the divinity onto wax paper or parchment paper. Let them sit and cool for at least 4–6 hours or overnight to firm up.
  7. Once set, enjoy your No Fail Jello Divinity! Store leftovers in an airtight container for up to a week.
