Ingredients

  • 1 ½ lbs beef stew meat or sirloin tips, cut into bite-sized pieces
  • 1 package onion soup mix (dry)
  • 1 can (10.5 oz) cream of mushroom soup (or cream of onion soup)
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp soy sauce
  • 1 tbsp olive oil (for browning)
  • 1 ½ cups uncooked rice (preferably long grain white rice)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C).
  2. Brown the beef: In a large skillet over medium-high heat, heat olive oil. Season the beef tips with salt and pepper. Brown the beef in the hot skillet for about 3-4 minutes, turning to ensure all sides are browned.
  3. Prepare the casserole: In a large baking dish, combine the browned beef, onion soup mix, cream of mushroom soup, beef broth, Worcestershire sauce, and soy sauce. Stir well to mix.
  4. Add rice: Stir in the uncooked rice, making sure the rice is evenly distributed and submerged in the liquid.
  5. Cover and bake: Cover the baking dish tightly with aluminum foil and bake for 1 ½ to 2 hours, or until the beef is tender and the rice has cooked through. Do not peek during baking to allow the flavors to meld properly.
  6. Serve: Once done, remove from the oven, fluff the rice with a fork, and serve the beef tips and rice together. Garnish with fresh parsley, if desired.

Notes

  • You can substitute the cream of mushroom soup with cream of celery or cream of onion soup for a slightly different flavor.
  • For added flavor, consider adding sliced mushrooms or garlic to the beef mixture.
  • If you prefer a thicker sauce, you can stir in a tablespoon of cornstarch mixed with water in the last 10 minutes of baking.
