Ingredients
-
2 cups rolled oats
-
1/2 cup sunflower seeds
-
1/2 cup pumpkin seeds
-
1/2 cup dried cranberries (or raisins, apricots, or any dried fruit of your choice)
-
1/4 cup honey or maple syrup
-
1/4 cup unsweetened applesauce
-
1/4 cup coconut oil, melted (or butter)
-
1/2 tsp vanilla extract
-
1/4 tsp cinnamon
-
Pinch of salt
Instructions
-
Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking pan (8×8-inch or similar size) with parchment paper.
-
Mix Dry Ingredients: In a large bowl, combine the oats, sunflower seeds, pumpkin seeds, dried cranberries, cinnamon, and salt.
-
Combine Wet Ingredients: In a separate bowl, whisk together the honey (or maple syrup), applesauce, melted coconut oil (or butter), and vanilla extract.
-
Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and stir until everything is well coated and the mixture is sticky.
-
Press into the Pan: Transfer the mixture into the prepared baking pan and press it down firmly with the back of a spoon to ensure the mixture is compact.
-
Bake: Bake in the preheated oven for 15-20 minutes or until the bars are golden brown and set around the edges.
-
Cool and Slice: Remove from the oven and allow the bars to cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely before cutting into bars.

Feel free to adjust the dried fruits or seeds based on what you have available or prefer. You can use raisins, dried apricots, or even chocolate chips for added flavor.
