- 1 teaspoon baking soda

- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 3 cups old-fashioned rolled oats
- 1 cup raisins or chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream butter, brown sugar, and granulated sugar together in a large bowl until light and fluffy.
- Beat in eggs and vanilla extract until well combined.
- In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Stir in oats and raisins (or chocolate chips if using).
- Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing about 2 inches apart.
- Bake for 10–12 minutes, or until the edges are golden brown but centers are still soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Chill the dough for 30 minutes before baking for thicker cookies.
- Substitute dried cranberries or chopped nuts for raisins for variation.
- Store cookies in an airtight container at room temperature for up to 5 days.
- For a softer texture, slightly underbake and allow them to finish setting on the baking sheet.
