- 2 cups rolled oats
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup brown sugar, packed
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional)
- 1/2 cup raisins or dried cranberries (optional)
Instructions
- Preheat oven to 350ยฐF (175ยฐC). Grease or line an 8ร8 inch baking pan with parchment paper.
- In a large bowl, combine oats, flour, baking soda, cinnamon, and salt.
- In another bowl, whisk together melted butter, brown sugar, egg, and vanilla extract until smooth.
- Add wet ingredients to dry ingredients and mix until combined. Fold in nuts and dried fruit if using.
- Press mixture firmly and evenly into prepared baking pan.
- Bake for 20-25 minutes or until edges are golden brown and center is set.
- Allow to cool completely before cutting into bars.
Notes
- For extra crunch, sprinkle some oats or chopped nuts on top before baking.
- Substitute butter with coconut oil for a dairy-free version.
- Store in an airtight container at room temperature for up to 5 days.
