Description

Deliciously crunchy and chewy oatmeal bars packed with wholesome oats and a hint of sweetness, perfect for a quick snack or breakfast on the go.


Ingredients

  • 2 cups rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup raisins or dried cranberries (optional)

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease or line an 8ร—8 inch baking pan with parchment paper.
  2. In a large bowl, combine oats, flour, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together melted butter, brown sugar, egg, and vanilla extract until smooth.
  4. Add wet ingredients to dry ingredients and mix until combined. Fold in nuts and dried fruit if using.
  5. Press mixture firmly and evenly into prepared baking pan.
  6. Bake for 20-25 minutes or until edges are golden brown and center is set.
  7. Allow to cool completely before cutting into bars.

Notes

  • For extra crunch, sprinkle some oats or chopped nuts on top before baking.
  • Substitute butter with coconut oil for a dairy-free version.
  • Store in an airtight container at room temperature for up to 5 days.
