Description

These Oatmeal Raisin Cookie Bars combine the comforting flavors of oatmeal and raisins into an easy-to-make bar form. They have all the chewy goodness of oatmeal cookies but with the convenience of bars. Perfect for a quick snack, lunchbox treat, or dessert, these bars are soft, slightly sweet, and loaded with oats and raisins.

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 1/2 cups raisins
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  2. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy and smooth.
  3. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the oats, flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the raisins and chopped walnuts (if using).
  7. Spread the dough evenly into the prepared baking pan, pressing it down gently.
  8. Bake for 25-30 minutes, or until the bars are golden brown and a toothpick inserted into the center comes out clean.
  9. Allow the bars to cool completely in the pan on a wire rack before cutting into squares.
  10. Serve and enjoy your soft and chewy oatmeal raisin cookie bars!

  • For a different twist, try adding chocolate chips or coconut flakes to the dough.
