These Oatmeal Raisin Cookie Bars combine the comforting flavors of oatmeal and raisins into an easy-to-make bar form. - 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups old-fashioned rolled oats

- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1 1/2 cups raisins
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
- In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy and smooth.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the oats, flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the raisins and chopped walnuts (if using).
- Spread the dough evenly into the prepared baking pan, pressing it down gently.
- Bake for 25-30 minutes, or until the bars are golden brown and a toothpick inserted into the center comes out clean.
- Allow the bars to cool completely in the pan on a wire rack before cutting into squares.
