Instructions

  • Prepare the Chocolate Filling: In a medium saucepan, whisk together the cocoa powder, sugar, flour, and milk. Add the egg yolks and butter, then cook over medium heat, stirring constantly until the mixture thickens into a smooth, creamy filling. Remove from heat, stir in the vanilla, and pour into the cooled pie crust.
  • Make the Meringue: In a large bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add the sugar while continuing to beat until stiff peaks form.
  • Bake the Meringue: Spoon the meringue over the chocolate filling, spreading it to touch the edges of the crust. Bake at 350°F (175°C) for 10-15 minutes, until the meringue is golden and toasted.
