Ingredients

  • 2 tablespoons real butter
  • Pinch of salt

Instructions

  • Peel and slice the potato. Cook in a small pan of water until very tender. Drain off the water.
  • Mash the potato with butter, vanilla, and salt until free of lumps.
  • Add powdered sugar gradually, mixing on low speed until the mixture becomes thick and slightly sticky.
  • Roll out the candy mixture on a powdered sugar-coated surface to a 1/4 inch thickness.
  • Spread a thin layer of peanut butter over the candy, leaving a small border.
  • Roll the candy up, chill in the freezer, then slice into pieces.
