Description

  • 1 tsp baking powder
  • 1/4 tsp salt

  • 12 tbsp milk (if needed to bring dough together)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and sugar together with an electric mixer until light and fluffy, about 2-3 minutes.
  4. Beat in the egg, vanilla extract, and almond extract (if using) until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If the dough seems too dry, add a tablespoon or two of milk until it comes together into a soft dough.
  6. Lightly flour a surface and roll the dough out to about 1/4 inch thickness. Use a round cookie cutter or glass to cut out circles, and place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Sprinkle a little granulated sugar on top of each tea cake before baking for a light, sweet crunch on top.
  8. Bake for 12-15 minutes, or until the edges of the tea cakes are golden brown. Be careful not to overbake them, as they can become dry.
  9. Allow the tea cakes to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  10. Serve with your favorite tea or coffee and enjoy!
