Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan, or line the bottom with parchment paper for easy removal.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Combine Wet Ingredients: In a large mixing bowl, whisk together the olive oil and sugar until smooth and combined. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and lemon zest.
  4. Add Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the milk and lemon juice. Start and end with the dry ingredients, mixing just until combined.
  5. Bake the Cake: Pour the batter into the prepared cake pan. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
