Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.

  2. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, garlic powder, and herbs (if using).

  3. Add wet ingredients: Add eggs, oil, and buttermilk to the dry ingredients. Stir until just combined.

  4. Fold in zucchini and cheese: Gently fold in the shredded zucchini, cheddar, and Parmesan (if using) until evenly distributed.
