- 1 lb ground beef
- 4 medium potatoes, diced (Yukon gold or russet work well)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup heavy cream
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon Italian seasoning
- Salt and black pepper to taste
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 2–3 minutes, until softened.
- Add ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
- Add the diced potatoes, garlic, paprika, Italian seasoning, salt, and pepper. Stir to combine.
- Pour in the beef broth, bring to a simmer, cover, and cook for 10–12 minutes or until the potatoes are fork-tender. Stir occasionally.
- Remove the lid, pour in the heavy cream, and stir. Simmer uncovered for another 3–5 minutes, or until the sauce thickens slightly.
- Sprinkle shredded cheese over the top, cover the skillet again, and let sit for 2 minutes or until cheese is melted.
- Garnish with chopped fresh parsley and serve hot.
Notes
- You can swap ground beef for ground turkey or sausage.
- Add chopped spinach or peas in the last few minutes of cooking for extra veggies.
- Use half-and-half instead of heavy cream for a lighter version.
