  • 2 cups fresh spinach, roughly chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup beef broth
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp dried Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. In a large skillet or pan, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened, about 3-4 minutes.
  2. Add the ground beef to the pan and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
  3. Stir in the diced tomatoes (with juices), beef broth, Italian seasoning, salt, and pepper. Bring to a simmer.
  4. Add the pasta to the skillet and stir to combine. Cover and cook for 10-12 minutes, or until the pasta is tender, stirring occasionally and adding more broth if necessary to prevent the pasta from sticking to the pan.
  5. Once the pasta is cooked, stir in the chopped spinach and cook for 1-2 minutes until wilted.
  6. Sprinkle with grated Parmesan cheese and toss to combine. Adjust seasoning to taste.
  7. Serve hot, garnished with fresh basil or parsley if desired.

Notes

  • For a lighter version, use lean ground turkey or chicken in place of ground beef.
  • If you prefer a creamier dish, add 1/4 cup of heavy cream or cream cheese after the spinach wilts.
