Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet ranch seasoning mix
  • 4 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 lb elbow macaroni or your preferred pasta
  • 1 1/2 cups shredded cheddar cheese
  • Salt and pepper, to taste
  • 1/2 cup milk
  • 2 tbsp butter
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned, breaking it apart as it cooks. Drain any excess fat.
  2. Add the chopped onion and garlic to the pot. Cook for about 3 minutes, until the onion is softened.
  3. Stir in the ranch seasoning mix, beef broth, and cream of mushroom soup. Bring to a simmer over medium heat.
  4. Add the pasta to the pot, stirring to combine. Cover and cook for about 10-12 minutes, or until the pasta is tender and most of the liquid is absorbed.
  5. Reduce the heat to low and stir in the shredded cheddar cheese, milk, and butter. Continue to cook, stirring occasionally, until the cheese has melted and the sauce is creamy.
  6. Taste and adjust seasoning with salt and pepper as needed.
  7. Garnish with fresh parsley before serving, if desired.

Notes

  • You can substitute ground turkey or chicken for the ground beef for a lighter version.
  • For extra creaminess, add more cheese or use heavy cream instead of milk.
