Description

This One-Pot Cheesy Taco Pasta is a perfect dish for Taco Tuesday, combining the flavors of tacos with cheesy pasta in a single pot! It’s quick, easy, and ready in just 30 minutes, making it ideal for busy weeknights.

Ingredients

Scale
  • 1 pound ground beef
  • 1/2 teaspoon salt
  • Pinch of black pepper
  • 1 ounce packet taco seasoning (or 3 1/2 tablespoons homemade taco seasoning)
  • 2 cups water
  • 1 cup jarred mild salsa
  • 8 ounces uncooked rotini pasta
  • 1 1/2 cups shredded Mexican-style cheese
  • Optional toppings: chopped tomatoes, avocado, crushed tortilla chips, chopped cilantro

Instructions

  • Preheat skillet: Heat a large, deep skillet over medium heat.
  • Cook beef: Add ground beef to the skillet and season with salt and pepper. Cook, stirring occasionally, until beef is fully cooked. Drain the grease.
  • Add seasoning and liquids: Stir taco seasoning into the beef, followed by the water, salsa, and uncooked pasta.
  • Simmer: Bring the mixture to a boil. Once boiling, stir, cover, and reduce heat to low. Simmer for about 15 minutes or until the pasta is tender.
  • Add cheese: Turn off the heat and stir in the shredded cheese until melted.
  • Serve: Serve immediately with optional toppings like tomatoes, avocado, or crushed tortilla chips.

Notes

  • Store-bought salsa works great, but feel free to use your favorite jarred salsa for added flavor.
  • For a twist, try ground turkey or add in any leftover veggies like bell peppers.
  • Enjoy this simple, flavorful meal with minimal cleanup thanks to the one-pot method!
