Ingredients
-
12 oz pasta (such as fusilli, penne, or rotini)
-
2 tablespoons olive oil
-
2 large onions, thinly sliced
-
2 cloves garlic, minced
-
1 teaspoon dried thyme
-
4 cups beef broth (or vegetable broth for a lighter version)
-
1 tablespoon Worcestershire sauce
-
1 tablespoon balsamic vinegar
-
Salt and pepper, to taste
-
1/2 cup shredded Gruyère cheese (or Swiss cheese)
-
1/2 cup shredded Parmesan cheese
-
Fresh parsley, chopped (for garnish)
Instructions
-
Caramelize the Onions:
In a large pot or Dutch oven, heat olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for 25-30 minutes, until the onions are soft, golden brown, and caramelized. Make sure to stir frequently to prevent burning. -
Add the Garlic and Seasoning:
Once the onions are caramelized, add the minced garlic, dried thyme, salt, and pepper. Stir and cook for an additional 1-2 minutes until the garlic becomes fragrant. -
Cook the Pasta:
Add the beef broth, Worcestershire sauce, and balsamic vinegar to the pot. Stir well, scraping up any browned bits on the bottom of the pot. Bring the mixture to a boil.
Add the pasta and stir. Reduce the heat to medium-low and simmer for 10-12 minutes, stirring occasionally, until the pasta is cooked al dente and has absorbed most of the liquid. -
Add the Cheese:
Once the pasta is done, stir in the shredded Gruyère and Parmesan cheeses. Continue stirring until the cheese has melted and the pasta is creamy and coated in the sauce. -
Serve:
Garnish with fresh parsley and serve immediately. Enjoy your cozy, one-pot French onion pasta!
Notes
-
If you prefer a vegetarian version, you can use vegetable broth instead of beef broth.
-
For a bit of crunch, you can top the pasta with crispy fried onions or croutons.
-
You can substitute Gruyère cheese with Swiss cheese or even mozzarella for a different flavor profile.
