  • 2 tablespoons olive oil

  • 2 large onions, thinly sliced

  • 2 cloves garlic, minced

  • 1 teaspoon dried thyme

  • 4 cups beef broth (or vegetable broth for a lighter version)

  • 1 tablespoon Worcestershire sauce

  • 1 tablespoon balsamic vinegar

  • Salt and pepper, to taste

  • 1/2 cup shredded Gruyère cheese (or Swiss cheese)

  • 1/2 cup shredded Parmesan cheese

  • Fresh parsley, chopped (for garnish)


Instructions

  1. Caramelize the Onions:
    In a large pot or Dutch oven, heat olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for 25-30 minutes, until the onions are soft, golden brown, and caramelized. Make sure to stir frequently to prevent burning.

  2. Add the Garlic and Seasoning:
    Once the onions are caramelized, add the minced garlic, dried thyme, salt, and pepper. Stir and cook for an additional 1-2 minutes until the garlic becomes fragrant.

  3. Cook the Pasta:
    Add the beef broth, Worcestershire sauce, and balsamic vinegar to the pot. Stir well, scraping up any browned bits on the bottom of the pot. Bring the mixture to a boil.
    Add the pasta and stir. Reduce the heat to medium-low and simmer for 10-12 minutes, stirring occasionally, until the pasta is cooked al dente and has absorbed most of the liquid.

  4. Add the Cheese:
    Once the pasta is done, stir in the shredded Gruyère and Parmesan cheeses. Continue stirring until the cheese has melted and the pasta is creamy and coated in the sauce.

  5. Serve:
