Description

This creamy, cheesy one-pot pasta is packed with garlic, Parmesan, tender mushrooms, and fresh spinach. Itโ€™s the perfect quick and comforting meal! Perfect for weeknights when youโ€™re craving something delicious yet simple to prepare.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 cups fresh spinach
  • 2 cups chicken or vegetable broth
  • 1 cup half-and-half or heavy cream
  • 8 oz fettuccine or spaghetti
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • Optional: Red pepper flakes for a little heat
  • Fresh parsley, for garnish

Instructions

  • Cook the Mushrooms and Garlic:
    • Heat the olive oil in a large pot over medium heat. Add the mushrooms and cook for about 5-7 minutes, stirring occasionally, until browned and tender.
    • Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Add Liquids and Pasta:
    • Pour in the broth, half-and-half (or heavy cream), dried thyme, salt, and pepper. Stir to combine and bring the mixture to a boil.
    • Add the pasta to the pot, ensuring itโ€™s submerged in the liquid. Cover and cook, stirring occasionally, until the pasta is al dente, about 10-12 minutes. If necessary, add more broth or water to keep the pasta covered.
  • Add Spinach and Parmesan:
    • Once the pasta is cooked, stir in the fresh spinach and Parmesan cheese. Stir continuously until the spinach wilts and the cheese melts into the sauce, creating a creamy texture.
  • Season and Serve:
    • Taste the pasta and adjust the seasoning with more salt, pepper, or red pepper flakes for added heat, if desired.
    • Garnish with fresh parsley and more Parmesan cheese. Serve immediately.

Notes

  • Pasta Substitution: You can substitute fettuccine with spaghetti, penne, or any pasta you prefer. Just adjust the cooking time based on the pasta shape you use.
  • Creaminess: For an even richer dish, use heavy cream instead of half-and-half.
  • Heat Level: Add red pepper flakes if you prefer a touch of heat in your pasta.
