A hearty and flavorful one-pot meal combining kielbasa, pasta, and vegetables for a quick and satisfying dinner.

- 1 lb (450g) kielbasa sausage, sliced
- 12 oz (340g) pasta (penne or rotini)
- 1 cup (150g) cherry tomatoes, halved
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups (480ml) chicken broth
- 1 cup (120g) shredded mozzarella cheese (optional)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced kielbasa and cook until browned, about 5 minutes.
- Add chopped onion and garlic; sauté until translucent, about 3 minutes.
- Pour in chicken broth and bring to a boil.
- Add pasta and cherry tomatoes. Reduce heat to medium-low, cover, and simmer until pasta is cooked and liquid is absorbed, about 10-12 minutes.
- Stir in shredded mozzarella cheese if using, until melted and creamy.
- Season with salt and pepper to taste. Serve hot.
Notes
- You can substitute kielbasa with smoked sausage or any preferred sausage.
- For extra flavor, add chopped bell peppers or spinach during cooking.
- For a spicier version, add red pepper flakes.
