Description

A hearty and flavorful one-pot meal combining kielbasa, pasta, and vegetables for a quick and satisfying dinner.


Ingredients

  • 1 lb (450g) kielbasa sausage, sliced
  • 12 oz (340g) pasta (penne or rotini)
  • 1 cup (150g) cherry tomatoes, halved
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups (480ml) chicken broth
  • 1 cup (120g) shredded mozzarella cheese (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced kielbasa and cook until browned, about 5 minutes.
  2. Add chopped onion and garlic; sauté until translucent, about 3 minutes.
  3. Pour in chicken broth and bring to a boil.
  4. Add pasta and cherry tomatoes. Reduce heat to medium-low, cover, and simmer until pasta is cooked and liquid is absorbed, about 10-12 minutes.
  5. Stir in shredded mozzarella cheese if using, until melted and creamy.
  6. Season with salt and pepper to taste. Serve hot.

Notes

  • You can substitute kielbasa with smoked sausage or any preferred sausage.
  • For extra flavor, add chopped bell peppers or spinach during cooking.
  • For a spicier version, add red pepper flakes.
