Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Season chicken breasts with salt, pepper, and oregano.
  2. Heat olive oil in a large skillet or pot over medium-high heat. Add chicken and sear until golden brown on both sides, about 4 minutes per side. Remove and set aside.
  3. In the same pot, add onion and garlic; sauté until softened, about 3 minutes.
  4. Add sun-dried tomatoes and orzo; stir to coat the orzo with oil and toast slightly.
  5. Pour in chicken broth and bring to a simmer.
  6. Return chicken to the pot, cover, and cook for 15 minutes, or until chicken is cooked through and orzo is tender.
  7. Stir in heavy cream and Parmesan cheese. Cook for another 2-3 minutes until sauce is creamy and heated through.
  8. Adjust seasoning with salt, pepper, and red pepper flakes as desired.
  9. Garnish with fresh basil or parsley before serving.

  • Use low-fat cream or milk for a lighter version.
  • Sun-dried tomatoes can be replaced with roasted red peppers for a different flavor.
