- 4 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 1/2 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 1 small onion, diced
- 3 cups chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- Fresh basil or parsley, chopped (for garnish)
Instructions
- Season chicken breasts with salt, pepper, and oregano.
- Heat olive oil in a large skillet or pot over medium-high heat. Add chicken and sear until golden brown on both sides, about 4 minutes per side. Remove and set aside.
- In the same pot, add onion and garlic; sauté until softened, about 3 minutes.
- Add sun-dried tomatoes and orzo; stir to coat the orzo with oil and toast slightly.
- Pour in chicken broth and bring to a simmer.
- Return chicken to the pot, cover, and cook for 15 minutes, or until chicken is cooked through and orzo is tender.
- Stir in heavy cream and Parmesan cheese. Cook for another 2-3 minutes until sauce is creamy and heated through.
- Adjust seasoning with salt, pepper, and red pepper flakes as desired.
- Garnish with fresh basil or parsley before serving.

- Use low-fat cream or milk for a lighter version.
- Sun-dried tomatoes can be replaced with roasted red peppers for a different flavor.
