Description
A flavorful and easy one-pot meal featuring tender steak slices, zesty tomato sauce, and perfectly cooked pasta all simmered together for a quick weeknight dinner.
Ingredients
Scale
- 1 lb flank or sirloin steak, thinly sliced
- 2 tablespoons olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 2 cups beef broth
- 8 oz pasta (penne, rigatoni, or your choice)
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- Salt and black pepper, to taste
- 1/4 cup grated Parmesan cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet or pot over medium-high heat. Add sliced steak, season with salt and pepper, and cook until browned but not fully cooked through. Remove steak and set aside.
- In the same pot, add diced onion and sauté until translucent, about 3 minutes. Add garlic and cook for 1 minute until fragrant.
- Add diced tomatoes, beef broth, crushed red pepper flakes, oregano, smoked paprika, salt, and pepper. Stir to combine.
- Add the pasta to the pot, stirring to submerge in the liquid. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 10-12 minutes, stirring occasionally, until pasta is al dente and most liquid is absorbed.
- Return steak to the pot, stirring to combine and warming through for 2-3 minutes.
- Remove from heat and sprinkle with grated Parmesan cheese, if using.
- Garnish with fresh parsley and serve immediately.
Notes
- Use any pasta shape you prefer, adjusting cooking time accordingly.
- For extra zest, squeeze fresh lemon juice over the finished dish.
- Swap beef broth for vegetable broth for a lighter flavor.
