Description

A flavorful and easy one-pot meal featuring tender steak slices, zesty tomato sauce, and perfectly cooked pasta all simmered together for a quick weeknight dinner.

Ingredients

Scale
  • 1 lb flank or sirloin steak, thinly sliced
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 cups beef broth
  • 8 oz pasta (penne, rigatoni, or your choice)
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet or pot over medium-high heat. Add sliced steak, season with salt and pepper, and cook until browned but not fully cooked through. Remove steak and set aside.
  2. In the same pot, add diced onion and sauté until translucent, about 3 minutes. Add garlic and cook for 1 minute until fragrant.
  3. Add diced tomatoes, beef broth, crushed red pepper flakes, oregano, smoked paprika, salt, and pepper. Stir to combine.
  4. Add the pasta to the pot, stirring to submerge in the liquid. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 10-12 minutes, stirring occasionally, until pasta is al dente and most liquid is absorbed.
  5. Return steak to the pot, stirring to combine and warming through for 2-3 minutes.
  6. Remove from heat and sprinkle with grated Parmesan cheese, if using.
  7. Garnish with fresh parsley and serve immediately.

Notes

  • Use any pasta shape you prefer, adjusting cooking time accordingly.
  • For extra zest, squeeze fresh lemon juice over the finished dish.
  • Swap beef broth for vegetable broth for a lighter flavor.
