Tender, juicy chicken is cooked with fresh broccoli in a savory garlic and herb sauce, all in one pan for easy cleanup. Serve it over rice, pasta, or enjoy as-is for a low-carb option.
Ingredients
-
1 lb boneless skinless chicken breasts, cut into bite-sized pieces
-
2 tablespoons olive oil
-
3 cups broccoli florets
-
3 cloves garlic, minced
-
1/2 teaspoon onion powder
-
1/2 teaspoon paprika
-
Salt and black pepper, to taste
-
1/3 cup chicken broth
-
1 tablespoon lemon juice (optional)
-
Grated Parmesan, for topping (optional)
Instructions
-
Heat oil in a large skillet over medium-high heat. Add chicken, season with salt, pepper, paprika, and onion powder. Cook until browned and cooked through, about 5–6 minutes. Remove and set aside.
-
Add a splash of oil if needed, then sauté garlic for about 30 seconds until fragrant. Add broccoli and chicken broth. Cover and steam for 4–5 minutes, or until broccoli is tender.
-
Return chicken to skillet and stir everything together. Add lemon juice, if using. Simmer for 2–3 minutes to allow flavors to blend.
-
Serve warm, topped with grated Parmesan if desired. Pair with rice, pasta, or cauliflower rice.
Notes
-
Swap chicken for tofu or shrimp for variation.
-
Add red pepper flakes for a kick of heat.
-
Store leftovers in an airtight container for up to 3 days — perfect for meal prep!
