  • 1 lb kielbasa sausage, sliced into 1/4-inch thick pieces

  • 4 medium potatoes, peeled and diced

  • 1 small onion, chopped

  • 1 red bell pepper, chopped

  • 2 tablespoons olive oil (or vegetable oil)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon smoked paprika

  • Salt and pepper to taste

  • Fresh parsley or chives for garnish (optional)


Instructions

  1. 1. Prepare the Potatoes:

    • Heat a large skillet over medium heat. Add 1 tablespoon of olive oil.

    • Add the diced potatoes to the skillet and season with salt, pepper, garlic powder, and onion powder.

    • Cook the potatoes, stirring occasionally, for 10-12 minutes, until they begin to soften and turn golden brown. Remove them from the skillet and set them aside.

    2. Cook the Kielbasa:

    • In the same skillet, add the remaining tablespoon of olive oil.

    • Add the sliced kielbasa and cook for 4-5 minutes, stirring occasionally, until the kielbasa is browned and slightly crispy on the edges.

    3. Add Vegetables:

    • Add the chopped onion and red bell pepper to the skillet with the kielbasa.

    • Sauté for 3-4 minutes, until the vegetables are softened.

    4. Combine Potatoes and Kielbasa:

    • Return the cooked potatoes to the skillet and stir everything together. Cook for an additional 2-3 minutes to heat through and combine all the flavors.

    • Adjust the seasoning with more salt and pepper to taste.

    5. Serve:

    • Garnish with fresh parsley or chives, if desired. Serve hot and enjoy your one-skillet meal!

Notes

  • Vegetable Variations: Feel free to swap the bell pepper for other vegetables like zucchini, spinach, or peas. You can also add a handful of cheese for extra flavor.
