  • 2 tablespoons vegetable oil, divided
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 cups cooked rice (preferably day-old rice)
  • 1/2 cup frozen peas and carrots (optional)
  • 2 eggs, beaten
  • 2 tablespoons soy sauce (for the fried rice)
  • 1 teaspoon oyster sauce (optional)
  • 1 teaspoon rice vinegar
  • 1/4 teaspoon black pepper
  • 2 green onions, chopped (for garnish)
  • Salt to taste

Instructions

  1. Marinate the beef:
    • In a small bowl, combine the sliced beef, 2 tablespoons of soy sauce, and sesame oil. Toss to coat, and let it marinate for about 10-15 minutes.
  2. Cook the beef:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
    • Add the marinated beef and cook for 2-3 minutes, until browned and cooked through. Remove the beef from the skillet and set aside.
  3. Sauté the onions and garlic:
    • In the same skillet, add the remaining tablespoon of vegetable oil.
    • Add the sliced onion and cook for 4-5 minutes, until softened and caramelized.
    • Add the minced garlic and cook for an additional 30 seconds, until fragrant.
  4. Fry the rice:
    • Push the onions and garlic to the side of the skillet.
    • Add the beaten eggs to the skillet and scramble them until fully cooked.
    • Add the cooked rice, breaking up any clumps. Stir to combine with the eggs and onions.
  5. Add sauces and vegetables:
    • Add the soy sauce, oyster sauce (if using), rice vinegar, and black pepper. Stir everything together to coat the rice evenly.
    • If using, add the frozen peas and carrots and cook for another 2-3 minutes, until heated through.
  6. Combine with beef:
    • Return the cooked beef to the skillet and stir to combine. Cook for an additional 1-2 minutes until everything is heated through.
  7. Garnish and serve:
    • Garnish with chopped green onions and adjust the seasoning with salt to taste.
    • Serve immediately and enjoy!

  • For the best results, use cold, day-old rice, as it fries better and gives the fried rice a perfect texture.
