Description

These Ooey-Gooey Buffalo Chicken Pizza Pockets are the perfect combination of spicy buffalo chicken and cheesy pizza goodness. Wrapped in a soft, golden dough, they’re the ultimate hand-held snack or dinner that’s sure to satisfy your cravings. Serve them with a side of ranch or blue cheese dressing for extra flavor!

For the Filling:

  • 2 cups cooked chicken, shredded (rotisserie chicken works great!)
  • 1/2 cup buffalo sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup ranch dressing or blue cheese dressing
  • 1 tablespoon olive oil (for brushing dough)

For the Dough:

  • 1 can refrigerated pizza dough (or homemade dough if preferred)
  • 1 teaspoon garlic powder (optional, for extra flavor)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional, for added heat)

For Dipping:

 

  • Ranch or blue cheese dressing (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a medium bowl, combine the shredded chicken and buffalo sauce. Stir in the cream cheese, ranch or blue cheese dressing, and 1/2 cup of the shredded mozzarella cheese. Mix well until everything is evenly incorporated.
  3. Roll out the pizza dough on a lightly floured surface. If using store-bought dough, roll it out into a rectangle or circle about 1/4 inch thick.
  4. Cut the dough into squares or circles, depending on your preference for pocket size.
  5. Spoon a generous amount of the buffalo chicken mixture onto the center of each dough square or circle. Top with the remaining mozzarella cheese.
  6. Fold the dough over the filling to form pockets, pinching the edges together to seal them. If desired, brush the tops of the pockets with olive oil for a golden finish.
  7. Place the pizza pockets on the prepared baking sheet and bake for 15-20 minutes, or until the dough is golden brown and crispy.
  8. Remove from the oven and let them cool for a few minutes before serving. Serve with ranch or blue cheese dressing for dipping. Enjoy!

Notes

  • For a spicier version, add a few dashes of hot sauce or sprinkle extra red pepper flakes inside the filling.
  • You can use cooked ground chicken or turkey as an alternative to shredded chicken.
