For the Cinnamon Roll Base:

  • 2 cans refrigerated cinnamon rolls (8-count each)
  • 1/4 cup butter, melted
  • 1/2 teaspoon ground cinnamon

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream

For the Cinnamon Swirl:

  • 1/4 cup butter, softened
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon

For the Glaze:

  • 1/2 cup powdered sugar
  • 1 tablespoon milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Prepare the Oven & Pan: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. Make the Cinnamon Roll Base: Roll out the cinnamon rolls and slice each roll into quarters. Spread the pieces evenly across the bottom of the prepared pan, pressing them gently together to form an even layer. Brush the cinnamon roll base with melted butter and sprinkle with ground cinnamon.
  3. Prepare the Cheesecake Filling: In a medium bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream until fully incorporated. Pour this mixture over the cinnamon roll base in the pan.
  4. Make the Cinnamon Swirl: In a small bowl, combine the softened butter, brown sugar, and ground cinnamon to create the cinnamon swirl mixture. Spoon the mixture in small dollops over the cheesecake layer. Use a knife or toothpick to swirl the cinnamon mixture into the cheesecake layer.
  5. Bake: Place the pan in the oven and bake for 35-40 minutes, or until the cheesecake is set and the top is lightly golden. The center should not jiggle when you gently shake the pan.
  6. Make the Glaze: While the bars are baking, whisk together the powdered sugar, milk, and vanilla extract to make the glaze.
  7. Cool & Serve: Allow the bars to cool completely before cutting into squares. Drizzle the glaze over the top of the bars just before serving. Enjoy!

Notes

  • For an extra gooey texture, allow the bars to sit at room temperature for a few minutes before serving.
  • You can make these ahead of time and store them in the refrigerator for up to 3 days.
  • If you prefer a thicker glaze, you can add more powdered sugar until you reach your desired consistency.
