Description

Ingredients

  • 1 egg
  • 1 cup ricotta cheese (whole milk or part-skim)
  • Zest of 1 orange
  • 2 tablespoons fresh orange juice
  • 1 cup dried cranberries
  • Powdered sugar, for dusting (optional)

Instructions

  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, beat the butter and sugar until light and fluffy.
  • Add the egg and ricotta cheese, mixing until well combined. Stir in the orange zest and juice.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the dried cranberries.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each cookie.
  • Bake for 12-15 minutes or until the edges are lightly golden. Let cool on a wire rack before dusting with powdered sugar if desired.
