Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the butter and sugar until light and fluffy.
- Add the egg and ricotta cheese, mixing until well combined. Stir in the orange zest and juice.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the dried cranberries.
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each cookie.
- Bake for 12-15 minutes or until the edges are lightly golden. Let cool on a wire rack before dusting with powdered sugar if desired.
