Description

A bright and flavorful side dish featuring tender orzo pasta tossed with tangy lemon, marinated artichokes, fresh herbs, and a touch of olive oil.


Ingredients

  • 1 cup orzo pasta
  • 1 cup marinated artichoke hearts, chopped
  • 1 lemon, zest and juice
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Optional: 1/4 cup crumbled feta cheese

Instructions

  1. Cook orzo according to package instructions until al dente. Drain and set aside.
  2. In a large bowl, whisk together lemon juice, lemon zest, olive oil, garlic, salt, and pepper.
  3. Add the cooked orzo, chopped artichoke hearts, and parsley to the bowl. Toss well to combine.
  4. If desired, sprinkle crumbled feta cheese on top.
  5. Serve warm or at room temperature as a side dish or light lunch.
