- 1 cup orzo pasta
- 1 cup marinated artichoke hearts, chopped
- 1 lemon, zest and juice
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped

- Optional: 1/4 cup crumbled feta cheese
Instructions
- Cook orzo according to package instructions until al dente. Drain and set aside.
- In a large bowl, whisk together lemon juice, lemon zest, olive oil, garlic, salt, and pepper.
- Add the cooked orzo, chopped artichoke hearts, and parsley to the bowl. Toss well to combine.
- If desired, sprinkle crumbled feta cheese on top.
- Serve warm or at room temperature as a side dish or light lunch.
