Ingredients
Scale
- 2 pounds baby potatoes (or small Yukon gold or red potatoes), halved or quartered
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary (or thyme)
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
- Preheat the Oven:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- Prepare the Potatoes:
- Wash and scrub the potatoes to remove any dirt. Cut them in half or quarters depending on their size to ensure even cooking.
- In a large mixing bowl, toss the potatoes with olive oil, garlic powder, dried rosemary, paprika, salt, and pepper. Make sure all the potatoes are evenly coated with the seasonings.
- Roast the Potatoes:
- Arrange the seasoned potatoes in a single layer on the prepared baking sheet, cut side down to get crispy edges.
- Roast in the preheated oven for 30-35 minutes, flipping them halfway through, until the potatoes are golden and crispy on the outside and tender inside.
- Add the Parmesan:
- Sprinkle the grated Parmesan cheese evenly over the potatoes during the last 5 minutes of roasting. Continue baking until the cheese melts and crisps up, about 5 more minutes.
- Serve:
- Remove from the oven and garnish with fresh parsley if desired. Serve immediately as a side dish to your favorite meal.
Notes
- You can use any type of potato you prefer for this recipe, but baby potatoes work best for crispy results.
- For extra flavor, add a squeeze of lemon juice or a drizzle of balsamic vinegar before serving.
- You can also use fresh herbs, such as rosemary or thyme, instead of dried herbs.
