  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the Oven:
    • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Prepare the Potatoes:
    • Wash and scrub the potatoes to remove any dirt. Cut them in half or quarters depending on their size to ensure even cooking.
    • In a large mixing bowl, toss the potatoes with olive oil, garlic powder, dried rosemary, paprika, salt, and pepper. Make sure all the potatoes are evenly coated with the seasonings.
  3. Roast the Potatoes:
    • Arrange the seasoned potatoes in a single layer on the prepared baking sheet, cut side down to get crispy edges.
    • Roast in the preheated oven for 30-35 minutes, flipping them halfway through, until the potatoes are golden and crispy on the outside and tender inside.
  4. Add the Parmesan:
    • Sprinkle the grated Parmesan cheese evenly over the potatoes during the last 5 minutes of roasting. Continue baking until the cheese melts and crisps up, about 5 more minutes.
  5. Serve:
    • Remove from the oven and garnish with fresh parsley if desired. Serve immediately as a side dish to your favorite meal.
