Description

These crispy Oven-Fried Feta Rolls are filled with a creamy feta and ricotta cheese mixture, baked to golden perfection. Drizzled with a sweet and spicy chili honey, they are a delicious appetizer or snack that will leave your guests wanting more.

For the Rolls:

  • 8 oz feta cheese, crumbled
  • 1 cup ricotta cheese
  • 1 tsp fresh thyme leaves (optional)
  • 6 sheets phyllo pastry, cut in half
  • 1/2 cup melted butter or olive oil, for brushing

For the Chili Honey:

 

  • 1/2 cup honey
  • 1/2 tsp red chili flakes

Instructions

  • Prepare the Filling:
    In a bowl, combine crumbled feta cheese, ricotta cheese, and fresh thyme (if using). Mix well until smooth and well-blended. Set aside.
  • Assemble the Rolls:
    Preheat the oven to 400°F (200°C). Place one half-sheet of phyllo pastry on a clean surface. Lightly brush with melted butter or olive oil. Spoon about 1 tablespoon of the cheese mixture near one end of the phyllo sheet. Roll up the pastry, folding in the sides as you go to create a neat roll. Repeat with the remaining sheets of phyllo and cheese mixture.
  • Bake the Rolls:
    Arrange the rolls on a parchment-lined baking sheet. Bake in the preheated oven for 15-20 minutes, or until the rolls are golden brown and crispy.
  • Prepare the Chili Honey:
    In a small saucepan, warm the honey over low heat. Add the red chili flakes and stir to combine. Remove from heat and set aside.
  • Finish & Serve:
    Drizzle the chili honey over the baked rolls or serve it on the side for dipping. Garnish with fresh thyme, if desired. Serve warm for the best flavor.

Notes

  • Keep the phyllo pastry covered: Phyllo dough can dry out quickly. Keep it covered with a damp cloth as you work to prevent it from becoming brittle.
  • Make ahead: You can assemble the rolls ahead of time and refrigerate them until ready to bake. Simply increase the baking time by 2-3 minutes if baking from chilled.
  • Freezing: To make them in advance, freeze the rolls before baking. Bake directly from frozen, adding a few extra minutes to the baking time.
