Description

These Oven Fried Potatoes & Onions are a crispy, flavorful side dish that’s easy to make and pairs perfectly with almost any meal. With golden, crispy edges and tender centers, the combination of seasoned potatoes and sweet onions makes for a comforting and satisfying dish. The oven does all the work, making this a healthier alternative to traditional fried potatoes!

Ingredients

Scale
  • 4 large russet potatoes (or your favorite variety), peeled and sliced into 1/4-inch thick rounds
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme or rosemary (optional)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat for easy cleanup.
  2. In a large bowl, toss the sliced potatoes and onions with olive oil until well coated.
  3. Add the garlic powder, paprika, salt, pepper, and dried thyme or rosemary (if using) to the bowl. Toss again to ensure the potatoes and onions are evenly seasoned.
  4. Arrange the potato and onion slices in a single layer on the prepared baking sheet. For extra crispiness, try to spread them out without overlapping too much.
  5. Bake for 30-35 minutes, flipping the potatoes halfway through, until they are golden brown and crispy on the edges.
  6. Once baked, remove from the oven and garnish with fresh parsley if desired.
  7. Serve immediately as a side dish to your favorite main course.

Notes

  • You can add a little grated parmesan cheese during the last 5 minutes of baking for an extra cheesy flavor.
  • For a spicier version, add a pinch of cayenne pepper or chili powder to the seasoning mix.
  • These potatoes can be served alongside grilled meats, roasts, or as part of a hearty brunch.
  • Leftovers can be stored in an airtight container in the fridge for 1-2 days and reheated in the oven to maintain crispness.
