Ingredients

  • 1 lb smoked sausage, sliced into 1/2-inch rounds
  • 1.5 lbs baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss baby potatoes with olive oil, garlic powder, smoked paprika, dried thyme, salt, and pepper.
  3. Spread the potatoes evenly on a baking sheet.
  4. Roast potatoes for 20 minutes.
