- 1.5 lbs baby potatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss baby potatoes with olive oil, garlic powder, smoked paprika, dried thyme, salt, and pepper.
- Spread the potatoes evenly on a baking sheet.
- Roast potatoes for 20 minutes.
- Remove the baking sheet and add smoked sausage slices, tossing gently to combine.
- Return to the oven and roast for an additional 15-20 minutes, or until potatoes are crispy and sausage is heated through.
- Garnish with chopped fresh parsley before serving.
